Rest & Relish Meal Plan – August 6 – August 12, 2018. This week we continue keeping the kitchen cool with both grilling and Instant Pot recipes!

Rest & Relish Meal Plan - August 6 -12, 2018

It looks to be another hot and humid week in here in the South! I am continuing to use the grill this week with our meals, but the Instant Pot is in heavy rotation as well with the chance of showers all week.

Do you have an Instant Pot? We love ours and it came in handy when I had to make chicken & rice on the fly for my new pup this week! Poor thing got sick from the many changes she has endured over the last week.

Rest & Relish Meal Plan – August 6 – August 12, 2018

Monday

Instant Pot Corn Chowder. I have some corn I need to use ASAP, so I’m going to make this recipe up as I go. I’ll report back on what I concocted!

Tuesday

Banana Pepper “Nachos”. My in-laws have an abundance of fresh banana peppers, so we are lucky to have a stockpile as well!

The fresh banana pepper is a very mild pepper, so the kids actually MAY like it. I know they like everything else in this meal, so this is a great time to introduce a new ingredient.

I plan to slice the peppers and fill each half with black beans and cheese. I’ll quickly broil them in the toaster oven until charred and creamy. Serve with guacamole, salsa and chips!

Wednesday

We enjoyed grilled mahi mahi over spaghetti squash at the beach recently, so I’ve decided to recreate this dish at home. I just found a great method for cooking spaghetti squash in the Instant Pot, so I’m excited to try it this week.

I’ll throw some chicken on the grill for the non-seafood lover in the family, while making sure to grill extra chicken for Thursday and Friday.

Thursday

Grilled Pesto Shrimp Quinoa Salad Bowl. I baste the shrimp with my homemade pesto and serve over a healthy quinoa salad.

We have loved this dish so much, I’m making it again this week! Life has been hectic with the kids’ home from school, a new dog and endless entertaining. I promise this recipe is coming soon!

Friday

Caesar Salad w/ leftover chicken and shrimp. My kids love salads, but Caesar salad was the first salad my daughter ever enjoyed.

I’ve learned to start with a basic recipe and build upon it for the kids. She may have started with Caesar salad, but now she enjoys quite a few others!

Saturday

Cook’s night off! Leftovers or out to dinner.

Sunday

Individual grilled pizzas. I plan to make homemade dough and divide the dough into four smaller rounds. Each family member can design their own pizza using a tomato or pesto base, mozzarella cheese, and a few favorite toppings.

I love a tomato base with mozzarella and fresh banana peppers, while the kids’ favorite is bacon and olives.
