Rest & Relish Meal Plan – July 16 – 22, 2018. This week’s meal plan is a little different since the hubs and I will be out of town part of the week. The grandparents (other set) are moving in, so I am buying and prepping for them most of the week.
We are headed to the coast this week for a fishing tournament and my in-laws will be keeping the kids for a large portion of the week. They will be holding down the fort, so I need to make sure that my fridge and freezer are stocked!

Monday
Did you know it’s officially Corn Fritter Day? I just received a dozen ears of freshly picked bi-color corn, so I’m celebrating with a riff on corn fritters. We will have Fresh Corn Cakes with Summer Salsa. A simple green salad on the side will be perfect with this recipe!
Tuesday
Taco Tuesday is also getting a twist with Baked Black Bean Nachos. This is a dish I have been making since we married almost sixteen years ago.
Spray a baking dish with cooking spray, add tortilla chips, top with one drained can of black beans, shredded Colby Jack cheese and bake at 350° for approximately 10 minutes. Top with fresh veggies (we like corn, tomatoes and green onions), plain Greek yogurt and avocado for an easy simple supper!
Wednesday
Chicken Pot Pie prepared by The Fresh Market with a side of fresh green beans. My son has been begging me to buy this pie every time we visit The Fresh Market, so he will be super happy with tonight’s meal!
Thursday
I plan to prepare fresh pesto from my basil plants and store in the refrigerator this week. Toss the pesto with your favorite cooked pasta, add corn on the cob and sliced tomatoes to round out the meal!
Friday
Chicken and Vegetable Stir Fry over Brown Rice Noodles. My son chose the vegetables….broccoli, carrots and edamame. Add cubed chicken with Shake-in-a-Jar Stir Fry Sauce and you have a well-balanced meal. Substitute tofu for a vegetarian dish.
Saturday
Spaghetti and Meatballs. I plan to prep and freeze the meatballs earlier in the week. Everyone loves a homemade tomato sauce over pasta except for one family member. She will get the leftover pesto with her spaghetti.
If I were home, I would eat the pasta and sauce with sauteéd mushrooms instead of meatballs.
Sunday
Out. We are bidding farewell to some close family friends today, so tonight is a special going away party for them. Insert sad face…..
