Our family is back from the beach and trying to get back on a schedule this week. You will see a few repeats on this meal plan because I am trying to catch up on life. Easy peasy for me this week!
Rest & Relish Meal Plan – July 2 – July 8, 2018
Monday
It is just me and the kids for dinner tonight, so we are keeping it simple with my Rainbow Vegetable Hummus Flatbreads. We are caring for a friend’s garden, so we have lots of garden fresh tomatoes to work with this week!
The kids enjoyed picking tomatoes yesterday and ate a few small ones in the process! All of tonight’s flatbread toppings will be placed in individual bowls so they can prepare their own dinner.Of course I will help with the oven, but when you involve kids in the kitchen, they are much more likely to try new foods!
Tuesday
It’s Taco Tuesday and this week we will have my Roasted Cauliflower Tacos. Don’t forget to allow extra time if you plan to make my Healthy Homemade Tortillas. They don’t take a lot of hands-on time and can be warmed in the oven if you prep them earlier.
Wednesday
Happy Fourth of July! My oven will not be turned on today and we’ll keep it simple with burgers on the grill. Pinterest has some cute ideas for ways to elevate your burger spread. I found this pin a while back and love the idea of serving condiments in Mason Jars. I have a lot of Mason jars, so here is another great idea for keeping cocktails cold for your friends!
Don’t forget the vegetarians if you choose a burger bar. It is really easy to throw some portabella mushrooms, peppers, eggplant or squash on the grill. Your veggie-loving friends will appreciate the thought and this allows them to build a sandwich or just have a plate of various vegetables and sides.
Speaking of sides, some great side options for burger night include Perfect Creamy Deviled Eggs, Grilled Corn and Tomato Salad, coleslaw, or a simple green salad. I think I will make my Strawberry Pretzel Salad with the addition of blueberries as a fun, patriotic dessert.
Thursday
We are enjoying more tomatoes in a Tomato Pie later this week. This is a classic Southern recipe and I will post my version for you this week. If you are shopping ahead, you will need a store-bought pie crust, tomatoes, cheese (your favorite) and mayonnaise.
Friday
If you follow along with me each week, you will notice this Friday’s meal is a repeat of last Friday’s. This is because our plans changed this past week and we did not get a chance to make the Grilled Herb Shrimp and Shaved Summer Squash Salad that I planned.
I apologize if you were looking for the squash recipe last week, but it will be up very soon. It will include yellow squash and zucchini; yum!
Saturday
Cook’s night off; enjoy leftovers or a night out!
Sunday
We haven’t had homemade pizza in a while, so Sunday seems like a good day for a casual pizza supper. I usually make my homemade dough in my breadmaker and have some Versatile Veggie Sauce in the freezer.
This means I can dump my dough ingredients in the breadmaker and pull the sauce from the freezer for easy dinner prep. I also think I will make smaller pizzas and attempt to grill them outside to avoid heating the kitchen. Have you tried grilled pizza before?
