Rest & Relish Meal Plan – July 23 – 29, 2018. This week’s meal plan is fresh and light with lots of salads and grain bowls!
We are getting back into our regular routine today following our mid-week vacation last week. The kids are off to day camp, so I am doing laundry, grocery shopping and getting the house in order today.
I try to poll each member of the family before I meal plan each week, so hopefully everyone has something they are craving during the week. It also makes them feel special that I’ve asked and then followed through with their request.
Rest & Relish Meal Plan – July 23 – July 29, 2018
Monday
Our daughter’s request for the week was seafood and my husband’s was lots of salad, so I’m making a Salmon Niçoise Salad tonight. Greens, tomatoes, potatoes, olives, haricot verts (French green beans) with a caper vinaigrette. I love this salad so much and will try to put together a proper post soon!
While my son will not eat the salmon, he loves all of the other ingredients, so I’ll leave the salmon off of his plate.
He has requested steak this week, so I’ll grab one for him tonight to honor his one request! I am trying to get him to eat less red meat, but he certainly loves it.
Tuesday
Taco Salad Bar. Simply prep all of your desired ingredients in individual bowls and let everyone prepare their own dinner.
This week will be cooked quinoa, black beans, chopped romaine, fresh corn, sliced grape tomatoes, my mother-in-law’s homemade salsa, and diced avocado. Hot sauce optional, but highly recommended!
Wednesday
Grill Night. One of my favorite ways to cook a large amount of protein and vegetables to enjoy multiple nights of the week!
I plan on grilled shrimp and chicken kebabs this week. I have a ton of fresh corn I need to use, so I plan to whip together a succotash to serve with the kebabs.
Thursday
Farro Bowl w/ Pesto and Vegetables. I love the combination of farro and pesto! Vegetables that pair well with these flavors include peas, zucchini, corn, and asparagus. Look for my homemade pesto recipe coming soon!
Friday
I plan to pair the leftover chicken and shrimp from Wednesday with my Mediterranean Orzo Salad . Easy Friday night!
Saturday
We have house guests arriving on Saturday afternoon and they have requested a traditional NC BBQ meal, so I have the night off!
Sunday
Burger Night. I hope to keep multiple children (and adults) happy with beef or veggie burgers, salad, fruit and dessert!
I have a ton of cherries and peaches I need to use, so perhaps a fruity concoction and ice cream? Fresh and fruity summer desserts are the best!
