Rest & Relish Meal Plan – July 30 – August 5, 2018. This week is a mixture of cooking and minimal to no cooking. It is that kind of week! 

Rest & Relish Weekly Meal Plan - July 30 -August 5, 2018

 

Well, I must first apologize for being a day late with my weekly meal plan post. If you follow me on social media, you may have seen that we adopted a new dog on Sunday! She is a five-year-old  miniature dachshund named Abby and we are already smitten with her!

Abby joins our 14-year-old mini dachshund named Rupert. They are getting along well so far! Abby is quite a bit overweight, so she’s getting her own specialized meal plan this week too.

In addition to adding a new family member, we also hosted guests from Saturday – Monday and our first floor AC went out on Sunday. I mean….what are the odds?!

As you can tell, I’ve been a little preoccupied over the last several days and didn’t get this post out yesterday as planned. So sorry!

 

Rest & Relish Meal Plan – July 30 – August 5, 2018

Monday

Takeout pizza. If you read the above paragraph, you understand!

Tuesday

Turkey Meatloaf with BBQ Sauce. I don’t have any bacon to top the meatloaf, but I think it will be tasty without the bacon. Serve with fresh green beans and salad.

Wednesday

Grilled Pesto Shrimp Quinoa Salad Bowl. I baste the shrimp with my homemade pesto and serve over a healthy quinoa salad. Full recipe post coming soon! The pic above is a little sneak peek of this dish.

Thursday

Soba Noodle Salad. This is the easiest dish ever! Cook your soba noodles, drain, toss in sesame oil and chill. Prepare a quick dressing of soy sauce, lime juice, scallions, and siracha or sambal oelek. Add any protein or chopped veggies to the noodles, toss with the dressing and enjoy!

Friday

Grill Night. We’re entertaining another family tonight, so I plan to cook grill salmon and chicken. I’ll serve with my Grilled Corn and Tomato Salad, grilled ciabatta bread and a green salad. We’ll likely end with an ice cream sundae bar!

Saturday

Cook’s night off! Leftovers or out to dinner.

Sunday

Snack Supper. Pile a platter hight with your favorite cheeses, meats, crudites, fresh bread and olives. Our favorite way to eat on a hot summer Sunday night!
