Rest & Relish Meal Plan – July 9 – 15, 2018. This week’s meal plan continues with lots of fresh summer vegetables and grill nights! It is actually cooler here this week, so we plan to enjoy hanging out on the deck and eating outside more.
We are kid-free for the next few days, but still eating at home most of the week. I hope I can crank out lots of work this week without the constant repetition of “Mom, Mom, Mom!”.
I do love them so much, but our summer was up-ended when my son broke his arm the week after he got out of school. We were able to switch camps and vacations around, which has impacted my ability to work on this site as much as I would like.
Luckily, he got the cast off this past week and he can be a bit more active. Summer plans resume this week!
Rest & Relish Meal Plan – July 9 – July 15, 2018
Monday
Today we’re using up the remaining vegetables in the veggie bin and some of our fresh shrimp from the freezer with a Summer Stir Fry. I’ve been making a version of this recipe every summer, so it is tried and true in our household. The Pioneer Woman’s version is a bit heavy on the butter for our taste, so feel free to use less and it will still be quite tasty.
Tuesday
Burrito Bowls with Cauliflower Rice. This is such a light and easy meal! You can make your own cauliflower rice or buy it already riced at the grocery store. I keep a large bag of frozen cauliflower rice in the freezer for our bowls and smoothies.
I’ll try to post my recipe for our favorite bowl soon! If you’re unsure if the kids will like cauliflower rice, toss a few cheesy quesadillas alongside their bowl.
Wednesday
Dinner out with friends!
Thursday
We’ll probably want a lighter meal after Wednesday’s night out, so I plan to make Shaved Summer Squash Salad with Lemon-Thyme Vinaigrette again this week with grilled salmon.
Friday
The munchkins are back! We will enjoy an easy grill night so we can soak up hearing all about their week with the grandparents. I plan on grilled chicken sausages (vegan for me), grilled Dutch potatoes and a green salad. Did you know you could grill potatoes? So yummy!
Saturday
Saturday’s dinner is my homemade pizza with either Versatile Veggie Sauce or pesto (repeat from this past week’s meal plan). I got our dates mixed up for when the kids were leaving this week, so we didn’t end up eating pizza last night. We enjoyed dinner out at our favorite local Indian restaurant instead!
Sunday
Burger Night! I’ll be posting a new burger recipe before Sunday, so stay tuned. Hint….it’s not beef.
