Rest & Relish Meal Plan – June 18 – 24, 2018. I have heard from several of you that planning family meals is a challenge and this is exactly one of the reasons I created Rest & Relish.
While I love to cook, I love even more to spend time with my family, so let’s get cracking with planning (fairly) simple family meals that allow you all to “Rest and Relish” in each other’s company with a delicious meal!
Rest & Relish Meal Plan – June 18 – 24, 2018
Monday: Here is a “Meatless Monday” idea for you! Our family LOVES this Back Pocket Stir Fry from Pinch of Yum. Do you follow Pinch of Yum?
If not, you should do so! Lindsay and I cook very similarly, yet her photography skills are light years away from my own! Very inspiring!
Adaptations: Swap the tofu for chicken or pork if you must have meat. Leave tofu out entirely if you are not a fan but want a meatless meal.
My son does not like tofu, so he eats this recipe without the tofu. I do add meat to his bowl if I have leftovers in the fridge, but this dish is so flavorful that he typically does not miss the meat!
I do recommend the extra crunch with the nuts on top of the noodle bowl. The soft noodles and crunchy nuts are a nice combination.
If you are a nut-free household but still want the extra crunch, substitute with additional fresh veggies, such as scallions, shredded carrots or even some sesame seeds!
Tuesday: We usually have Tex-Mex once a week, but not always on “Taco Tuesday”. This week it works out perfectly for us to have a quick and easy meal of my Black Bean Tostadas.
Wednesday: The hubs has a work meeting this week, so the kids and I are on our own. Perfect excuse for a healthy pizza option…..Hummus Veggie Flatbread! Recipe coming on Tuesday!
Check back in with me, but if you need to shop beforehand, grab some hummus, naan bread, your favorite cheese and veggies.
Thursday: It’s summer, so we are taking dinner outside for an easy, breezy picnic meal. Sandwiches, Fruit and my Mediterranean Orzo Salad.
Friday: Low Country Shrimp Foil Packets. Simply add some shrimp, potatoes, corn on the cob, oil, lemon and Old Bay together and wrap in aluminum foil. Grill on high heat for approximately 12-15 minutes and serve! Do you want an official printable recipe? Let me know in the comments and I will try to pull it together soon!
Saturday: Out
Sunday: Freezer Meal. While many people indulge in cooking on Sundays all day, I often take Sundays off. I will either pull out a freezer meal or prepare a simple snack supper. My son has been craving Baked Ziti, so this is likely to be defrosted this week! What are your favorites for Sundays?
