Rest & Relish Meal Plan – June 25 – July 1, 2018. We are leaping into the last week of June with a vegetable heavy meal plan, as well as a few great seafood dishes to enjoy the NC wild shrimp we scored this past weekend! The kids and I are soaking up the sun and waves for another few days, so I need easy meals to “Rest & Relish” in my time with them.
Rest & Relish Meal Plan – June 25 – July 1, 2018
Monday
Our favorite produce stand at the beach is teeming with fresh corn and tomatoes, so of course I plan to make my Grilled Corn and Tomato Salad. I will serve this salad tossed with quinoa and baby spinach for me.
The meat eaters will also have grilled chicken breasts. This is my go-to chicken breast recipe; everyone raves about it and it is so easy! I plan to keep the kitchen as cool as possible, so I will grill the chicken instead of bake this week!
Tuesday
Taco Tuesday (again!). This week we will have a Taco Salad Bar. Do you ever do this? I just place a bunch of prepped ingredients in bowls on the counter and let everyone create their masterpiece!
Ideas include: Chopped romaine lettuce, shredded cheese, chopped tomatoes, diced avocado, black beans, ground beef, salsa, plain Greek yogurt or sour cream, salsa, tortilla strips, hot sauce(s).
Wednesday
We’ve had a break from seafood for a few days, so we should be craving it again by Wednesday. My Lemony Shrimp Quinoa Bowl is the perfect easy weeknight meal! Did you see my shrimp haul on Instagram this weekend?

Thursday
My children have found a new love….garlic knots. Our favorite pizza restaurant at the beach makes the best garlic knots and I swear they would probably eat them slathered in beet hummus if I made them. BTW…I love beet hummus, do you? I have a great recipe!
Anyway, I am not going to rock the boat too much with this meal, so I plan to try Skinnytaste’s Easy Garlic Knots paired with my Versatile Veggie Tomato Sauce for dipping. We will add some greens via a salad and call it a day!
Friday
When I asked for shrimp recipe ideas on Instagram this past weekend, I got quite a few Ina Garten shout-outs, so I plan to start with her Grilled Herb Shrimp. The side dish for this meal will be a yummy Shaved Summer Squash Salad that I have been making for a few years. I will post the recipe later this week!

Sunday Snack Supper, i.e., our favorite way to eat on Sunday night.
This week I am planning a Vegetarian Mezze Platter. What is that?
Mezze is basically small plates meant for sharing and in this case, I pile a bunch of stuff on a plate and we snack. This week will be my homemade hummus, pita bread, assorted olives, roasted or crisp veggies, and dolmades (stuffed grape leaves).
