Rest & Relish Meal Plan – October 1 – 7, 2018. This week we are enjoying several one dish meals and using the oven more now that the temperature has dropped. 

Rest & Relish Weekly Meal Plan - October 1 - 7, 2018

Happy October! October is one of my favorite months of the year and I’m so glad it is here. I find myself baking more, adding cozy blankets around the house and cooking lots of comfort food.

I’m sorry for my lack of a meal plan last week. We hosted several family members from out of town and it was a hectic time with dinners, parties, and general catching up.

Today’s meal plan is exciting because I’m trying a few new recipes on the family. I hope you’ll try them along with me!

Rest & Relish Meal Plan – October 1 – 7, 2018

 

Monday

Sheet Pan Salmon & Veggies. Sheet pan meals are perfect for busy weeknights! We generally use whatever protein and vegetables we have on hand and cleanup is a breeze. This week I’m trying one of my latest Pinterest finds, so tonight’s menu is Mediterranean-inspired.

 

Tuesday

Weeknight Enchiladas. I also found this recipe on Pinterest a while back and think it will be a nice change from our regular Taco/Tostada Tuesday.

 

Wednesday

Lemony Shrimp Quinoa Bowl. Radishes are in season right now in my part of the world, so it’s a great time to enjoy my Lemony Shrimp Quinoa Bowl. The radishes taste so good cooked in ghee!

 

Thursday

Healthy Cream of Broccoli Soup. I’m trying this recipe for the first time and think I may modify it by cooking in the Instant Pot. I’ll let you know how it goes on Instagram, so make sure to follow me there!

 

Friday

Pizza Night. Homemade pizza with easy basil pesto, mozzarella and veggies. My kids look forward to pizza and a family movie on Friday nights. Any suggestions on what we should watch?

 

Saturday

Cook’s night off. Leftovers or out to dinner.

 

Sunday

Mediterranean Platter. Fill a platter with homemade hummus, olives, homemade tzatziki, stuffed grape leaves, crudites and pita bread. Pick you favorite board game and enjoy some quality family time!
