Rest & Relish Meal Plan – September 17 – 23, 2018. This week we are unloading the pantry and freezer to eat some of the food we stocked up on for Hurricane Florence.
Hello Monday! It’s been a crazy one at our house! We spent some time hunkered down in a closet during a tornado warning this morning and another day off from school due to a power outage at the kids’ school.
While we have felt some of the effects of Hurricane Florence, it is nothing compared to the devastation endured by our Eastern North Carolina and South Carolina neighbors. Please keep the Carolinas in your thoughts as our neighbors try to restore their communities after this catastrophic storm!

Rest & Relish Meal Plan – September 17 – 23, 2018
Monday
Shrimp & Grits. I loosely base my shrimp & grits on the late Bill Neal of Crooks Corner recipe, but have lightened mine up a bit and omitted the meat.
Tuesday
Taco Tuesday = Time-Saving Tuesday. It’s a full day of school and music lessons, so I’m keeping it simple with my Black Bean Tostadas. Feel free to add onto these with whatever veggies or protein you need to use as well!
Wednesday
Easy Southern Basil Tomato Pie & Green Salad. I need to use the pie crust in my freezer and I’m still loving the tomatoes in season, so let’s enjoy this dish while we can! I’ll also add some deli chicken salad to the kids’ plates because I don’t know if they’ll eat the pie, but I keep trying!
Thursday
Crockpot Vegetarian Chili. Toss your favorite beans, tomatoes and seasonings in a crock pot and slow cook for approximately six hours. You can get fancy with veggies and peppers if you like! We keep ours on the mild side and spice it up with hot sauce for the heat-lovers in the family!
Friday
We are hosting my aunt and uncle from Florida this weekend, so we’re pulling out all of the stops for a fabulous meal. We’ll grill a flaky white fish (I need to see what is on sale!) and chicken (for the meat-lovers), grilled asparagus and this Squash Gratin my friend just shared with me. He said it was great and re-heats well!
We’ll add some fresh bread and my Carrot Pecan Bundt Cake with Orange Cream Cheese Glaze for dessert! Have you tried this carrot cake? It’s getting great reviews on Pinterest!
Saturday
Cook’s night off! Leftovers or out to dinner.
Sunday
Tapas Night! Create a charcuterie board, pull out the board games and get ready for the week ahead!
