Rest & Relish Meal Plan – September 3 – 9, 2018. This week we are enjoying the end of summer farmer’s market haul!
Happy Labor Day! I hope everyone is enjoying this long weekend with family and friends. Unfortunately, not everyone has the luxury to take a break from work, so I’m also thinking of those who continue to labor this holiday weekend. I’m so appreciative of everyone’s service to our community, nation and world!
Rest & Relish Meal Plan – September 3 – 9, 2018
Monday
Salmon Skewers with Grilled Fairytale Eggplant. Labor Day = Easy Grill Night! We’ll throw some chicken on the grill for the boy who doesn’t eat seafood.
Tuesday
Grilled Shrimp, Okra & Purple Potatoes. I clearly love a meal that I can completely prepare on the grill (see Monday). Shrimp, okra and potatoes are such a good combo.
I will probably make a horseradish aioli to go along with this meal. The boy will have leftover chicken instead of shrimp.
Wednesday
Peanut Rice Noodle Stir Fry with Tofu and Sauteed Shishito Peppers. Have you tried shishito peppers? They are my favorite and generally mild (unless you are the one poor soul who eats a spicy one!).
Approximately 1 in 10 shishitos are spicy and when I say spicy…I mean eyes watering, drinking all of the water in your glass spicy! I have only eaten a spicy shishito on one occasion, so I’ll take my chances!
Thursday
Tangy Southwest Quinoa Bowl with Lime Vinaigrette. My in-laws dropped some fresh banana peppers and homemade salsa to us yesterday, so of course my Tangy Southwest Quinoa Bowl will make an appearance with such fresh ingredients. Such an easy and light meal!
Friday
Pizza Night! I love rolling out my homemade pizza dough, topping with either my homemade pesto or Nellino’s jarred sauce, fresh mozzarella and basil. Fri-yay!
Saturday
Cook’s night off! Leftovers or out to dinner.
Sunday
Burger Night. I’m trying to create a veggie burger recipe that my kids will enjoy, so I plan to serve them this week with my fingers crossed!
