Rest & Relish Meal Plans include six healthy dinners with one night off for the cook! Mostly vegetarian/pescatarian meals with simple substitutions for vegan and gluten-free diets.
Thanks for following along for another Rest & Relish Meal Plan post. This week is pretty busy for us with sports, music lessons and Halloween festivities, so the meal plan is extra easy this week. Feel free to alter or switch days around in the meal plan to suit your own scheduling needs!

Monday
Roasted Cauliflower Tacos with Pickled Onions and Creamy Chipotle Sauce.
It sounds complicated with a title that long, but it’s really not that difficult. Just be sure to build in time for the pickled onions! Check out the full post for how I got my kids to eat cauliflower!
Gluten-Free Tip: Choose corn instead of flour tortillas.
Tuesday
Gnocchi with Marinara. I’m hoping to make it to Trader Joe’s by this day to try their Cauliflower Gnocchi this week. Have you tried it yet? I hope it’s in stock! Our daughter will likely have her gnocchi with pesto. Who doesn’t like marinara?!?
Wednesday
Soup Night. I like to make soup in the crock pot on Halloween. It is the perfect meal to serve if you have people eating at different times (which is often the case for our family on Halloween). Peruse my Soup & Stew Recipes board on Pinterest for ideas!
Thursday
Greek Salad & Hummus. I bet we can all use a healthy “reset” meal after stealing a few pieces of the kids’ candy, right? If you make my hummus recipe at the beginning of the week, it’s also great for lunches or a quick appetizer if you’re hosting a Halloween party.
Friday
Pizza Night. Homemade pizza with my Versatile Veggie Tomato Sauce.
Gluten-Free Tip: Try Caulipower pizza crust. So yummy!
Saturday
Cook’s night off. Leftovers or out to dinner.
Sunday
Charcuturie Board. Are you surprised it’s another “Charcuterie Sunday”? Seriously though, it’s faster than ordering takeout and everyone is pleased with something on the platter.
I cannot end this post as I usually do without first mentioning the sadness I’m feeling after the horiffic mass shooting yesterday. My heart aches for those in Pittsburgh and the larger Jewish community. If you’re able, consider a donation to Southern Poverty Law Center, which works tirelessly to fight against such hatred.
