Healthy Banana Bread

  • Preheat the oven to 350 degrees F with the rack in the middle. 
  • In a large bowl, mash the bananas until smooth with a fork. Add the egg, coconut oil, honey and buttermilk and stir to combine. Gently fold in the remaining ingredients with a rubber spatula.
  • Pour the batter into a 8 1/2 x 4 1/2-inch loaf pan greased with a thin coat of coconut oil spray. Bake for 40-50 minutes or until a toothpick inserted into the center of the bread comes out clean. 
  • Carefully remove the bread from the pan by sliding a knife along the edges and inverting on a wire cooling rack. Cool for ~ 15-20 minutes. Slice and enjoy!


If you don't have buttermilk, you can simply add ~ 1-2 teaspoons of white vinegar or lemon juice to regular milk. Let mixture sit for five minutes before using in recipe. 
Be sure not to overmix the batter or the bread will not rise as well.
