  • 2 cups cornmeal
  • 2 t. baking powder
  • 1/4 t. baking soda
  • 1/4 t. kosher salt
  • 1 cup buttermilk
  • 1 egg
  • 1 egg white
  • 3 T. vegetable oil


  • Preheat oven to 375 degrees. 
  • Combine dry ingredients in one bowl. In a separate bowl, mix together wet ingredients. Coat a 10-inch cast iron skillet with with oil to coat the bottom of pan. Heat skillet in oven for five minutes. 
  • While oil is heating, combine wet and dry ingredients together into a batter. Remove skillet from oven and pour hot oil into batter. Mix the hot oil in batter and pour batter into skillet. 
  • Bake for 25 minutes until golden.
